Brownies Ubi (Sweet potato brownies)

Bye bye singkong, welcome ubi jalar...

This brownies was moist, sweet and chocolate-y. We could not trace the taste of the sweet potato. It covered perfectly by the chocolate. Could you see the white stud in the brownies. Yes, that's the sweet potato chunks actually not nuts. I didn't know why, but I could not combine the sweet potato well when I beat it with egg and sugar mixture. Maybe next time I will combine it with the chocolate instead.



Brownies ubi

Ingredients:

200 gr dark cooking chocolate
100 gr butter (me: 75 ml oil)
3 eggs
150 gr caster sugar (me: 100 gr)
100 gr mashed sweet potato
100 gr all purpose flour
1/2 tsp baking powder (me: omitted)


Method:

Preheat oven. Grease and line a 30 X 10 baking pan.
In a saucepan heat butter (or oil). 
When it melt, remove from the heat, add the chocolate and stir until they melt and well combined.
Beat eggs and sugar until thick. Add in sweet potato. 
Keep beating until all are well combined.
Off the mixer. Fold in flour carefully using a spatula.
Fold in the chocolate mixture until evenly incorporated.
Pour into the baking pan and bake for about 20 - 25 minutes. 
Do not overbake.
Let it cool completely cool before slicing.
