Idfb challenge 11 is about mie nusantara. Oh, who doesn't love mie (noodle)? I shouldn't miss it! I cook mie (noodle) quite often. But usually it is only mie goreng Jawa (Javanese fried noodle). Yes, that's because my children love fried noodle a lot. But, this time, due to this challenge, I should try something else. How about mie that is not fried?
Mie koclok cirebon is one of mie recipes that I wanted to try for so long. It got its name because the noodle is being shaken (koclok in Javanese language) in boiling water prior to be served. The kuah (sauce) is thick and tasty due to the coconut milk and corn flour. I got the basic recipe from mba wulan's site. It's a good a try dish, really tasty, but still cannot beat the Javanese fried noodle to my children :)
MIE KOCLOK CIREBON
1 packet dried egg noodle, boil
250 gr chicken breast fillet
100 gr cabbage, shred and
100 gr bean sprout
2 boiled egg
3 garlic
100 gr bean sprout
2 boiled egg
3 garlic
salt
1/2 tsp peppercorns
500 ml water
2 tbs corn flour
250 ml coconut milk
salt and pepper to taste
fried shallot
lime
Sambal
Kerupuk
spring onion and celery, finely chopped
Methods:
Marinate chicken with lime juice, salt and pepper. Set aside.
Pound garlic, peppercorns and salt. Stir fry it until fragrant. Set aside.
Boil chicken in water until cook through. Drain, reserve the stock. Shred into small pieces (you may fry it before shredding if you like).
Heat again the stock. Put the spices into it.
Dissolve corn flour in a small water. Pour it in the stock. Keep stirring until the soup thicken.
Pour coconut milk. Reduce the heat and cook until it thicken. Season with salt and pepper to taste. Remove from the heat.
Boil enough water. Place noddle, bean sprout and cabbage in a strainer. Dip the strainer in the boiling water and shake (koclok) it in the water for 1 minute or until the bean sprout and cabbage just wilted.
Pound garlic, peppercorns and salt. Stir fry it until fragrant. Set aside.

eh iyaaa...lupa ga ketulis di step ya mba Ayu, pake ayam kampung lebih bagus pastinya ya tapi ini aku pake fillet ayam biasa. air rebusan pertama aku buang, rebusan kedua yang dipake buat kuah... Thanks ya :)
