What you need:
1 tbs chopped oregano
1 tbs parsley
1 garlic clove
1 lemon, zested and juiced
100 ml olive oil
pinch of salt and pepper
8 salmon fillet, skin on
lemons, to serve
2-3 tbs olive oil for cooking
- For dressing: Whisk together the chopped herbs, garlic, zest, juice, and oil. Season to taste with salt and pepper.
- For fish: Heat a pan over medium heat, add oil. Season fish, cook flesh side down for 2 minutes. Turn fish over, cook for 2 minutes or until skin is crispy and golden.
- Drizzle dressing over fish to serve, with extra lemon wedges to serve
