Tahu Gunting

Just like tahu telur, this tahu gunting or also known as tahu tek is very popular in East Java. It is a dish that contain fried tofu (tahu), beansprout, cucumber and rice cake (lontong) with peanut-petis sauce. The tofu is cut using a scissor (gunting) rather than a knife. That's why it is called tahu gunting.

Ingredients:
4 firm tofu
100 gr bean sprout, trimmed
1 cucumber
2 - 3 stalks Asian celery
lontong/ketupat
kerupuk

for sauce:
4 garilcs
3 chilies
2 tsp palm sugar
1 tbs peanuts, fried
2 tbs petis udang/dark shrimp paste
2 tbs sweet soy sauce
75 ml water
1 tsp vinegar 5% (I didn't use it)
1/4 tsp salt




Directions:

Heat oil on a wok. Fry the tofu until golden brown (marinade with garlic, coriander and salt if you like). Drain and cut cube.
Place bean sprout on a bowl. Pour in hot boiling water. Simmer for 5 minutes. Remove and drain.
Peel the cucumber (I didn't do that to add green colour on the dish), discard the seed and chopped.
Wash the celery and finely chopped.

for sauce: Grind garlic, chilies, palm sugar and peanuts until fine. Add petis, water and sweet soy sauce. Mix well. Add the vinegar. Mix well. Taste with salt if necessary.
Serving: Slice ketupat/lontong, place on a plate. Top with the fried tofu, bean sprout, and cucumber. Pour the sauce. Garnish with celery and kerupuk.

Tahu Telur

I made this for our breakfast on the first day after I got home from our new year holiday. I saw the recipe for this tahu telur at mba Wulan's blog. She said that this yummy dish comes from East Java.

Tahu telur is a kind of omelet-style dish that contain cubed fried tofu (tahu) with bean sprout and peanut-petis sauce. I used some leftover fried tofu. Some people like to fried the tofu medium cooked but some directly put it in the batter without frying. To adjust to my Javanese tongue, I added a little palm sugar to the sauce. We can eat it with warm rice or on its own. Yum...

Keripik Tahu (Tofu chips)



Sometimes, having meal and snack is just not enough to satisfy us. We need something to crunch and munch between meal and or snack time. It's a nibble time... 

One of our favourite nibble is keripik tahu or tofu chips. It is thin tofu that is deep fried until crispy. It is so good, light and crunchy... You just can't stop crunching until they're all gone...^^

Although that I can easily find the tofu chips in the market, this time I tried to make it myself. I used tahu pong, a kind of tofu that has hollow inside. We need the skin only, reserve the flesh for other recipes.


Ingredients

Tahu pong
plain flour mix with rice flour in the ratio of 5 plain flour : 1 rice flour
Oil for frying

Spices to be ground together:
Garlic
Coriander seeds, toasted
Turmeric
Salt, to taste


Methods:

Cut diagonally the tofu.
Turn it inside out. Scoop out the flesh of the tofu, leaved only the skin.
Mix the ground spices with a little amount of water. 
Marinate the tofu skin in the spices. 
Dust the tofu with the flour mix. 
Fry on medium heat until golden brown.
Enjoy!

Tahu isi


I just got a small besek (traditional box made of bamboo) of tahu (tofu) pong. I don't really  familiar with this tahu. I do eat tahu almost everyday, but not this kind of tahu. I usually buy the white and firm tahu. 
Tahu pong gets its name from the word kopong which means empty in javanese because this tahu has such hollow inside. This will perfect for tahu isi or in other regions it is called tahu sumpel or tahu susur or tahu berontak (vegetables stuffed tofu). Some people add shredded chicken, egg or prawn for the filling but I prefer vegetables only.


Ingredients:

Tahu pong
oil for frying

For the filling:
Carrot, shredded
Bean sprout (Tauge)
Cabbage, shredded
Spring onions, thinly sliced
Garlic, finely chopped
Shallots, thinly sliced
Salt and pepper, to taste
Oil for stir frying

For the coating (batter):
Rice flour
All purpose flour
Water

To be ground together:
Garlic
Coriander, toasted 
Salt 
Turmeric (optional)
candle nut (optional)

Methods:
To make the filling:
Heat about 2 tbs oil on a wok. Fry garlic and shallot until fragrant. 
Add the carrot, stir fry until a bit soften, add cabbage, bean sprout, and spring onions. 
Stir fry until all cook but still crunchy. Season with salt and pepper. 
Remove from the heat. Set aside



Using a knife make a slit on one side of the tahu.
Firmly stuff the vegetables inside the tahu through the slit.
Do the same with the rest of them. Set aside.

To make the batter:
Ground together the spices.
On a bowl sift together rice flour and all purpose flour.
Add the spices. Make a well in the centre.
Pour in enough water to make consistency that not too thick and not too thin.
Stir to mix all the ingredients until well incorporated and smooth.


 Heat enough oil for deep frying on medium heat.
Take one stuffed tahu. Dip it into the batter. 
Put it in the hot oil. Fry the tahu until golden brown.
Serve immediately while hot with chillies and a cup of tea.

Rempah Tahu

Rempah tahu ini termasuk side dish atau pelengkap hidangan yang dulu sering dibikin nenek saya. Cara bikinnya gampang, dicampur kelapa dan bumbu halus trus digoreng. Yang ini harum daun jeruk dan kencurnya berasa banget...hmmm...aku tambahkan irisan cabe merah biar lebih sedeppp...



Bahan:
300 gr tahu putih, dihaluskan
150 gr kelapa parut kasar
1 butir telur, dikocok lepas
1 batang daun bawang , dipotong halus
1 sdm tepung terigu 
minyak untuk menggoreng
aku tambahkan irisan cabe merah


Bumbu halus:
3 siung bawang putih
6 butir bawang merah
1/2 sdt keetumbar
1 1/2 sdt garam
1/4 sdt merica
2 lembar daun jeruk, dibuang tulangnya
1 cm kencur
1 1/4 sdt gula pasir




Cara membuat:
Aduk rata semua bahan dan bumbu halus.
Ambil sedikit adonan, bentuk oval.
Goreng dalam minyak yang sudah dipanaskan sampai matang.
