Anzac Biscuits

I've been living in Perth for 2 years. It is a  nice place to live, really. The people are lovely and the city is absolutely beautiful. Before leaving next month, I just want to make traditional Australian things. It's gonna be a tribute to this city. This time I choose Anzac biscuits, classic Australian biscuits. They are easy to make...crunchy, buttery, and crisp... a delicious mix of coconut, oat and golden syrup.




1 cup rolled oat
1 cup plain flour
1 cup sugar (I use only 1/2 cup)
3/4 cup desiccated coconut
125 gr butter
2 tbs golden syrup
1/2 tsp bicarbonate soda
1 tbs hot water



  1. Combine oats, sifted flour, sugar and coconut.
  2. Combine butter and golden syrup, stir over gentle heat until melted.
  3. Mix soda with boiling water, add to butter mixture. Stir into dry ingredients.
  4. Take a tsp of mixture and place on lightly greased oven trays, allowing room for spreading.
  5. Cook in slow oven (150C) for 20 minutes.
  6. Loosen while still warm, then cool on trays.

    Rice Flaxseed Cupcake

    This recipe surely catches my eyes...rice flour in a cupcake? yup. Maybe not for the others but this is a new thing for me...I am keen to give it a try.... It is originally prepared for one with a food allergy or intolerance. That's way all the ingredients are supposed to be free of dairy, gluten, nut, soy, and egg. But because no one has that problem in my house, I use regular flour and baking powder, and milk instead of rice drink .... I add flaxseed and vanilla to boost the nutrition and flavour. It turns out beautifull...fluffy and moist...the taste? delicious...'It touches my heart' said my daugther... :D


    125 gr (dairy-free) margarine 
    115 gr caster sugar ----- I use 85 gr
    2 eggs (or equivalent egg replacer)
    125 gr (gluten-free soy-free) self raising flour
    90 gr rice flour
    3 tsp (gluten-free) baking powder
    125 ml rice drink ------- I use milk 
    icing sugar for dusting


    I add 2 tbs flaxseed meal and 1/2 tsp vanilla essence.



    • Preheat the oven 180C. Line muffin tin with paper cases.
    • Using an electric mixer, beat the margarine and sugar together well until light and fluffy.Add the eggs, one at a time, beating well after each addition.
    • Fold in the sifted dry ingredients alternately with the rice drink. Spoon the mixture evenly into the muffin holes and bake for about 15 - 20 minutes or until a skewer comes out clean when inserted into the centre.
    • Dust the cupcakes with icing sugar.

      Sweet Chilli Salmon

      Ternyata mengiris salmon tuh a bit tricky...licin...maka ketika beli lagi aku minta tolong si fish monger memotong-motongnya. Tapi kok tipis-tipis gitu ya...ga bisa dimasak seperti biasanya dong...bakalan susah dibediriin...cari resep lain lagi aja ya...ini dia, resep dari Margaret Fulton yang ada di catalogue woolworth...mudah dan enak...saladnya aja yang aku ganti ... menyesuaikan yang ada aja ... :)




      Ingredients:
      2 tbs olive oil
      1 red onion, finely slices
      1 garlic glove, finely chopped
      1/2 cup water
      1/3 cup (80 ml) sweet chilli sauce
      2 tbs fish sauce
      1 tbs grated ginger
      1 tbs white wine vinegar (I use lemon juice)
      4 x 150 gr salmon fillets
      125 gr snow peas (skip)
      salt (skip)
      3 cup mixed salad green
      1/2 cup mint leaves (skip)
      lime wedges to serve



      Method:
      1. Heat oil in the large frying pan on medium. Cook onion, stirring frequently, for 5 minutes or until soft. Add garlic and cook for 1 minute or until fragrant. Add water, sweet chili sauce, fish sauce, ginger and vinegar. Cook, stirring for 5 minutes until sauce thickens.
      2. Place salmon on sauce. Cook for 2 minutes each side, until just cooked. remove from heat and cool for 5 minutes.
      3. Blanch snow peas in boiling salted water for 1 minute (if using).Drain and refresh under cold water. Drain thoroughly.
      4. Place salad greens, snow peas and mint on a serving platter. Top with salmon pieces and drizzle over pan juices. Serve warm with lime wedges.

      Wholemeal Apple Muffins

      When I find this muffin recipe, I just can't resist to try it... it only needs 85 gr of sugar, compare to the other recipes that usually call for more than 100 gr ... for a healthier option, change half the flour with the wholemeal one, and butter with sunflower oil... I am quite happy with this muffin...it turns out good...and still tastes really good...



      115 gr butter (I use sunflower oil)
      285 gr plain flour (140 gr wholemeal SR flour + 145 gr plain flour)
      1 tbs baking powder
      pinch of salt
      2 eggs
      85 gr caster sugar (I use brown sugar)
      220 ml milk
      2 granny smith apples, peeled, chored and chopped
      1 tsp ground cinnamon


      1. Set the oven. Put cake cases in a muffin tin. Melt the butter in a pan. Sift the flour, salt, and baking powder into a bowl.
      2. Beat the eggs in a bowl, then add the sugar, milk, and melted butter. Add the flour mixture and fold it in.
      3. Fold the apples into the mixture, then spoon it into the cake cases.
      4. Bake the muffins for 25 to 30 minutes until they have risen and are firm and brown. Put them on a wire rack to cool.


      A bit about granny smith apple
      It originated here in Australia in the Sidney suburb of Ryde. the tree dated back to 1868 when a woman named Maria Ann Smith discovered a chance seedling... it is a firm, thick skinned fruit which is great for cooking. It has a crisp tangy flavour that works well with spices such as cinnamon, all spices and nutmeg.

      Carrot Coconut Cake

      Salah satu bahan makanan yang selalu ada di dapurku adalah wortel. Anak-anakku suka banget, baik mateng maupun mentahnya. kali ini pengen nyoba dibikin cake...cari resep yang mudah aja, dari buku resep untuk anak-anak...karena sekolah anakku nut free zone, jadi aku skip kacangnya ... hasilnya enak, rasa coconut, orange, dan cinnamonnya dominan, jadi ga berasa carrotnya sama sekali...





      225 gr carrots
      225 gr self raising flour and 2 tsp baking powder
      pinch of salt
      140 gr brown sugar (aku hanya pake 120 gr)
      Grated zest of 1 orange
      2 tsp ground cinnamon
      115 gr chopped roasted hazelnuts or walnuts (aku skip)
      55 gr desiccated coconut
      2 large eggs
      150 ml sunflower oil
      juice of 1 orange




      1. Set the oven. Grease the cake tin. Cut out a circle of baking parchment the same size as the tin and cover the base with it.
      2.  Peel the carrots and trim off their tops. Grate them using a grater or food processor.
      3. Sift the flour and baking powder into a bowl. Mix in the carrots, salt, sugar, orange zest, cinnamon, nuts, and coconut.
      4. Beat the eggs. Add the eggs, sunflower oil and orange juice to the cake mixture and mix everything together well.
      5. Spoon the mixture into the cake tin. Bake it for 60 to 75 minutes until a skewer pushed into the centre comes out clean.
      6. Leave the cake to cool in the tin for 10 to 15 minutes, then remove it from the tin and put it on a wire rack to finish cooling.

      Idul Adha 2011

           Saat aku masih kecil lebaran idul adha sama meyenangkannya dengan lebaran idul fitri. Walaupun tidak ada baju dan sepatu baru tapi ada sate dan gule kambing...seneeeeng banget...dulu kami punya beberapa kambing sendiri yang dititippeliharakan di kampung. Beberapa hari menjelang lebaran, Bapakku akan mengambilnya dan membawanya ke rumah untuk diqurbankan. Setelah kambing-kambing itu diikat pada pohon di belakang rumah, tugas kami lah, aku kakak adikku dan biasanya juga teman-teman kami, untuk memberi makan mereka. Kami beri mereka daun-daunan. Kadang kakakku membawa kambing-kambing itu ke tanah lapang dekat rumah untuk merumput.
           Pada hari raya, sepulang kami sholat ied di tanah lapang atau musholla di depan rumah, si kambing pun disembelih. Pestanya dimulai...setelah kambing dipotong-potong kami membantu ibu membagikannya ke tetangga sekitar rumah...ibuku akan memasak gule, kami membuat sate...menyunduk dan mengipas-ngipas sate sendiri....seruuuuu...walaupun akhirnya bau kambing dan asap jadi memenuhi seluruh rumah...kesukaan kami sate hati, ya hanya hati semua tanpa daging. Enak lho.
           Dua tahun belakangan ini aku merayakan lebaran di Perth, jauh dari keluarga. Biasanya kami sholat ied bersama masyarakat Indonesia di KJRI Perth. Lumayan lah bertemu teman-teman sesama masyarakat Indonesia, yang di sini jadi seperti keluarga juga. 
           Idul Adha ini lebaran terakhir kami di Perth sebelum kami boyongan pulang ke tanah air akhir tahun ini. Kami ingin merayakannya dengan cara yang berbeda. Tidak bersama KJRI tapi bersama masyarakat muslim Western Australia. Ya, DAWA atau Daawah Association of Western Australia menyelenggarakan Eid Salah in the Park. Tepatnya di Thomas Moore Park di Wilson, tidak begitu jauh dari rumah kami. Jamaahnya si tidak begitu banyak tapi dari berbagai bangsa...ya, aku bertemu muslim dari timur tengah, afrika, eropa timur, juga asia...jadi inget sedikit suasana di tanah suci, sholat bersama saudara muslim berbeda bangsa. seneeeng...
           Biar berasa lebaran aku masak kambing hari ini...ini dia:

      Bubur sagu mutiara


      Anak-anakku suka sekali makanan ini. Makanya dulu si embak udah tau sendiri, *kagak usah dikomando* membuatnya bila kami kehabisan stok jajanan di rumah. Waktu mau berangkat ke Perth, sempet sedikit bingung ntar di sana snacknya apa ya...eh ternyata di toko asia buanyaaak tersedia sagu mutiara, di supermarket juga ada...amaaan deh...yang ini produk Thailand, soalnya pas belanja ga nemu sagu buatan Indonesia yang biasa aku beli...yo wes kita coba aja yang Thailand punya...warnanya macem2, aku pilih yang ijo...butirannya lebih kecil-kecil, rasanya sama aja...cara bikinnya tetep dong ala Indonesia, tradisional, dimakan dengan kuah santan...aku ga pake resep ya, main feeling aja...kalo mau resepnya boleh liat di ncc-indonesia

      Onion Cheesy Bread


      Penasaran dengan cheesy bread yang kubuat beberapa waktu yang lalu...rasanya enak, tapi crusty...pengen yang empuk...coba modifikasi ya dengan menambahkan 1 kuning telur...dan untuk variasi rasa tambahkan cincangan spring onion... hmmm...rasanya mantap banget...


      Setelah dimodif jadi begini resepnya:
      125 ml warm water
      1 egg yolk
      1/2 tsp honey
      1 tbs finely chopped spring onion
      80 gr grated cheddar cheese 
      2 tbs grated permesan cheese 
      1/2 tsp salt
      300 gr bread flour 
      1/2 sachet instant yeast


      1 egg yolk, lightly beaten to decorate


      Cara Membuat:
      • Aku bikin roti ini pake bread maker, masukkan aja bahan-bahan sesuai urutan ke bread maker dan pilih menu dough. Untuk cara bikin pake tangan mungkin sama seperti di cheesy bread ya. Tambahkan spring onion setelah keju. 
      • Kempiskan adonan, potong dan timbang 25 gr-an. Ambil 1 adonan, bulatkan. Pipihkan. Lipat bentuk segitiga. Lakukan untuk semua adonan. Tutup dengan tea towel. Istirahatkan kurang lebih 10 menit. 
      • Ambil 1 adonan, pipihkan dengan rolling pin. Gulung menuju ke sisi yang runcing. Tutup dengan tea towel. Istirahatkan kurang lebih 1/2 sampai 1 jam sampai mengembang 2 kali lipat.
      • Olesi dengan kuning telur, panggang sampai kuning keemasan.


      Catatan:
      Aku menggunakan tepung tipo 'oo' merk colavita yang bikinan Italy, sama seperti tepung yang biasa aku pake untuk bikin pizza base. Kalo mau pake bread flour biasa mungkin dimulai dari 250 gr dulu aja ya, sama seperti resep aslinya...tambahkan tepung lagi dikit-dikit kalo terlalu lembek... :)

      Tuna and corn pizza


      Pizza base:
      Pizza dough-nya pake resep dari jamie oliver, aku modifikasi sedikit menyesuaikan bread machine-ku. Aku bikin 1/2 resep jadi seperti ini:

      250 ml air hangat
      2 sdm extra virgin olive oil
      1/2 sdt garam
      1/2 sdm gula pasir
      500 gr tepung tipo "oo" atau bread flour
      7 gr instant yeast

      Topping:
      tomato pasta/ pizza sauce
      tuna kalengan, tiriskan
      corn
      onion, cincang
      daun jeruk
      oregano kering
      salt and pepper
      extra virgin olive oil
      grated pizza cheese

      Aku bikin pizza dough pake bread machine, masukkan bahan-bahan sesuai urutan. Pilih menu dough. Untuk cara bikin dough menggunakan tangan bisa dilihat di website jamie oliver yang ini ya...
      Untuk topping, aku tumis sebentar aja onion, daun jeruk, tuna, dan corn. Beri garam dan black pepper.
      Setelah bread machine berbunyi beep...panaskan oven 180C. Pindahkan adonan ke meja yang telah ditaburi tepung. Punch adonan dan bagi ke dalam 2 pizza tray yang telah diolesi olive oil. Gilas membentuk lingkaran. Olesi extra virgin olive oil. Spread tomato paste dengan punggung sendok. Taburi oregano. Tabur topping. Beri garam dan black pepper. Terakhir taburi pizza cheese. 
      Supaya crispy, pizza harus dimasukkan ke oven ketika oven sudah benar-benar panas. Panggang sampai pizza matang, crisp, dan kekuningan.

      Apple Turnovers



      Gara-gara nonton tv yang tokoh ceritanya makan apple pie, anakku pun minta dibikinin apple pie...hayah...kagak punya loyangnya...eh, tapi kalau ga diturutin kasian juga ya...mulai lah cari-cari resep apple pie yang pake loyang biasa, ada ga ya...hihi...nemunya malah si apple turnovers ini, sejenis pie yang dilipat, jadi kan ga perlu loyang...kita coba ya...pake puff pastry aja biar mudah dan cepat...namanya juga percobaan pertama...dan ternyata semua suka...bolehlah, lain kali kita bikin yang pake adonan pie beneran...kalo perlu beli loyangnya deh... :)


      2 lembar frozen puff pastry, thawed
      1 can pie apple (aku pake 3 buah apel, diiris kecil-kecil)
      1/3 cup sultanas
      1 tbs brown sugar (aku tambahin lagi, sesuai selera lah ya...)
      1/2 tsp ground cinnamon
      aku tambahin 1 tbs margarine
      1 egg yolk, lightly beaten



      1. Combine pie apple, sultanas, brown sugar and cinnamon in a bowl. Karena tidak pake yang kalengan, jadi apelnya aku masak dulu. Panaskan margarine, masukkan apel, gula dan cinnamon, masak dengan api sedang sampai apel layu.
      2. Preheat oven 180C and line 2 baking trays with baking paper.
      3. Use a saucer as a guide to cut 4 rounds from each sheet of pastry. Biar gampang 1 lembar pastry aku jadikan 8 persegi panjang.
      4. Put about 2 tbs of apple mixture onto each pastry round (satu sisi dari persegi panjang) and fold over. Press edges with the back of a fork to seal. Place turnover onto the prepared trays. Brush lightly with beaten egg.
      5. Use a fork to prick a few holes into the pastry. Bake for 15 - 20 minutes until golden brown. Dust turnovers with icing sugar and serve warm or at room temperature.

      Cheesy Bread


      Yang ini roti keju bukan roti isi keju...karena kejunya dimasukkan ke adonan roti...bagi yang suka keju dan roti yang ber-crust atau agak keras pinggirannya, seperti french bread gitu...resep ini cocok banget...anak-anakku suka...


      150 ml warm water
      1/2 tsp honey
      60 gr grated cheddar cheese (aku menghabiskan stock 82 gr)
      2 tbs grated permesan cheese (ga pake)
      pinch of salt
      1 tsp mustard powder (ga pake)
      pinch of cayenne pepper (ga pake juga)
      250 gr bread flour (aku tambah jadi 300 gr)
      1/2 sachet instant yeast


      To decorate:
      1 egg, beaten
      currants/sesame seeds/poppy seeds/grated cheddar cheese


      How to make:
      • Sift the flour and salt into a mixing bowl. Stir in the yeast, honey, cayenne pepper and mustard (if using) and just enough water to form a soft dough.
      • Transfer to a floured surface and knead lightly for about 5 minutes to make a smooth, pliable dough. Gradually knead the grated cheeses into the dough. Jika menggunakan bread machine, masukkan saja bahan2 sesuai urutan. Gunakan menu dough.
      • Shape the dough into animal figures. Di buku tidak dijelaskan gimana cara ngebentuknya cuma ada fotonya doang, jadi aku kira-kira aja ya...bulatkan 25 gr adonan untuk badan  si turtle, buat 4 bentuk air mata untuk kaki, 1`air mata yang agak besar untuk kepala, dan 1 bentuk oval untuk ekor. Gabungkan semuanya dan rapikan. Transfer to a floured baking sheet. Cover them loosely with a tea towel and leave to rise in a warm place for about 1 hour or until doubled in size.
      • Brush with beaten egg and add currants for eyes.
      • Bake for 20 minutes or until golden brown.




        Catatan: Ternyata memasang mata juga tidak gampang...ketika adonan sudah mengembang susah nempelnya, dan ketika kita kutik-kutik adonan jadi berubah bentuk lagi...jadi mungkin sebaiknya pasang mata bersamaan ketika ngebentuk rotinya sebelum dikembangkan.
